No-Bake Chocolate Oatmeal Cookie

While I was looking for a new oatmeal chocolate chip cookie recipe to make, I came across this recipe.  No-bake cookie? really? wonder what that tastes like....and since I had all the ingredients on hand, I gave it a try.  Basically, if you LOVE chocolate, not allergic to peanut butter, and mix it all in oatmeal, you will love this cookie. Great for a quick sugar high. ;)

No-Bake Chocolate Oatmeal Cookie

1/2 C Butter
2 C Sugar
1/2 C Milk
4 TB Cocoa Powder
1/2 C Peanut Butter
3 1/2 C Oatmeal
2 tsp Vanilla

1- Add the first 4 ingredients into a  medium saucepan.
2- Bring to a roiling boil for 1 minute.
3- Remove from heat.
4- Stir in the next 3 ingredients.
5- Drop by the TB onto wax paper, and let cool completely.

These are my favorite cookies of all time....because of that, we only make them once every couple months. Reason why? I eat them all! :)

I make these all the time too. Except my recipe only calls for 2tbs of cocoa, which is totally not enough, so I usually put in 4 or 5 tbs. Whoohoo!
