Red, White, and Blue Cookies

In honor of our countries birthday tomorrow, I found this fabulous cookie recipe for the holiday! Two cookies, with a frosting middle, and white chocolate on top. yummm.

Red White and Blue Cookies
Cookies:
  • 2 white cake mixes
  • 2 eggs
  • 1 C butter, softened
  • 2 T water
  • 1 small package berry blue jello
  • 1 small package raspberry jello
  • 1/2 tsp red food coloring
  • 1/2 tsp blue food coloring
Frosting:
  • 2 T butter, softened
  • 4 C powdered sugar
  • 6 T milk
  • dash of salt
  • 1 tsp vanilla
Decorations:
  • 3/4 C white chocolate chips
  • 1 tsp shortening
  • red sprinkles (or whatever you want to use)
For the cookies:
  • To make the red dough, combine one of the cake mixes with 1/2 C melted butter, 1 egg, 1 T water, raspberry jello and red food coloring.  Mix until everything is well combined and you have the color you like. 
  • To make the blue dough, follow the directions above..just with the berry blue jello and the blue food coloring.
  • Roll them into small 1 1/2" balls, flatten a little, and then place on a lightly sprayed cookie sheet.
  • Bake 350 degrees, 8 minutes. Let them cool for 3-5 minutes on the sheet before moving to cooling rack.
Frosting:
  • Add all ingredients in a medium bowl, and beat for 2 minutes. add more powdered sugar or milk to the consistency you want.
  • Put frosting on one blue cookie, then put red cookie on top. (I pipped my frosting on the cookie)


Decorations:
  • Melt the chocolate either in a microwave, 30 seconds at a time, or melt in a bowl over simmering hot water (that's how I prefer to melt chocolate).
  • Add shortening, and still until it smooth and creamy.
  • Pipe the melted chocolate in whatever method is easier for you.....ziplock bag with small cut hole, pipping bag, or pipping bottle.
  • add sprinkles!
Looks long and possibly complicated, but I had soo much fun making these cookies! My girls helped me roll the dough balls, and decorating. When I saw these cookies on her website, I just had to make them for the 4th of July! Hope everyone has a great holiday!
