If you haven't heard, I am trying to hide good healthy food in what my kids eat. Seriously...if my little one see's anything close to the color green, she freaks out and won't touch it. Luckily my big girl will try everyone once....mostly. SO I ordered a couple of books from the Sneaky Chef, by Missy Chase Lapine. Simple ways to hide good food in their favorite meals! I've been at my wits end to get my girls to eat any kind of vegetable, and desperate to try anything. I made their first meal the other night. something simple...little small meatballs. Even though it took a little persuading to get the little one to eat meat, they both ate them up. Little did my girls know, that they were eating peas, spinach, and broccoli....and wheat germ in the meatballs. woohoo!
Basically, she has many different kinds of purees that you mix into their foods, and it helps "mask" the veggie flavor. I never thought I would see the day where I would be steaming and pureeing vegetables for my kids. (I hate vegetables too...so this is good for me). ;) My hubby likes to call it deceiving our children, but to that I just say...whatever it takes to get something good and healthy in them. The meatballs themselves were actually really tasty. I even liked them...and I knew what was inside. ;) I did cover the meatballs in a red sauce and let them eat them off of toothpicks...which was fun for them.
I may not be making these meals every night, but at least a few times a week.
Other examples: mac n'cheese with cauliflower, zucchini, yams, and carrots; chocolate cupcakes with blueberries, spinach, wheat germ, and whole grain flour; taco soup with white bean puree, carrots.

You'll have to check out Jessica Seinfeld's Deceptively Delicious. Same concept. The top shelf of my deep freeze is purees. I almost got Justin to eat banana bread the last time he was here until he saw me trying to sneak in the califlower. Crazy kids!!! My kids never know what hit them until after they finish, then I tell them.
